Smoking is finished by internal temperature, never by the clock. Two briskets of identical weight can finish two hours apart depending on fat content, airflow, how often you open the lid, and how long they sit in the stall. Use this to decide what time to wake up, not to decide when to serve. The only thing that tells you a cut is done is a thermometer in the thickest part of the meat.
Why the pull temperature is higher than the safe temperature
For most cuts on this list the number you cook to is well above the number that makes it safe to eat. Brisket and pork shoulder are safe at 145 F, but they are unpleasant to eat there. Connective tissue does not break down into gelatin until roughly 195-205 F, which is the entire reason low and slow exists.
Poultry and ground meat are the exceptions. For chicken, turkey and meatloaf the safety number is the target: 165 F for poultry, 160 F for anything ground. There is no texture argument for going further, and no shortcut for going less.
Safe minimum internal temperatures come from USDA guidance. When the estimate and the thermometer disagree, the thermometer wins.
What throws the estimate off
- The stall. Large cuts park at 150-170 F for hours while moisture evaporates. It is not a broken smoker. We wrote up what causes the stall and how to push through it.
- Opening the lid. Every peek costs you real time. If you are looking, you are not cooking.
- Cold weather and wind. An uninsulated smoker in winter can add hours.
- Wrapping. Foil or butcher paper speeds the back half of a cook considerably.
- Thickness beats weight. A thick 8 lb flat can take longer than a thin 10 lb packer.
